If you are anything like me, you love fried chicken but know it’s not good for you. Or there are lots of recipes where fried chicken would go better than baked chicken but in order to keep yourself on your healthy living journey- you do baked instead. Well no longer do you have to do that after this post!! I ran across this recipe and it has worked for me twice. It’s quick and easy and absolutely delicious!Below are the ingredients that you will need .

INGREDIENTS

3 chicken breasts, cut in strips (I get about 3 out of one breast)

4-5 tbsp butter

1 cup flour

½ cup Panko breadcrumbs

½ tsp salt

1 tbsp seasoning salt (I use Lawry’s)

½ tsp pepper

2 tsp paprika

 

Note- I have used chicken thighs and chicken breast tenderloins. Both worked well. The Panko seems to stick more on the breast.

Directions- place all contents in a large ziplock bag (except chicken and butter ) and shake the bag to mix it all.

Meanwhile- preheat your oven to 425 degrees and cover your non stick baking sheet with butter and place in oven to melt.

Put each piece of chicken  in bag and shake til covered. Place chicken on non stick baking sheet with melted butter. Cool for 15 mins and then turn over chicken. Allow it to cook for 15 mins on the other side as well. You may want to leave it in the oven a little longer depending on the color you want your chicken but you are all done!!!
